SWEET POTATO CASSEROLE | |
2 lg. cans sweet potatoes 1 c. sugar 1 c. butter 1 tsp. vanilla 2 eggs, beaten TOPPING: 1 c. brown sugar 1/3 c. melted butter 1 c. chopped pecans Put the canned sweet potatoes, with juice, in a saucepan. Heat until just hot. Drain off liquid, then whip the potatoes until smooth (like mashed potatoes). Add butter, sugar, vanilla and eggs and whip again until mixed thoroughly. Pour into a 9"x13" baking dish. Top with melted butter, sprinkle evenly with brown sugar and pecans. Bake at 350 degrees for 30 to 35 minutes. |
