BAKED MACARONI | |
1/2 c. chopped onion 1/4 c. chopped celery 1 clove garlic 4 tbsp. cooking oil 6 oz. can tomato paste 2 1/2 c. water 1/8 tsp. pepper 1/4 tsp. basil or oregano 1/4 tsp. salt Grated Parmesan cheese 2 c. Ricotta or cottage cheese 1/2 lb. lg. macaroni, cooked & drained Cook onion, celery and garlic in oil until soft. Remove garlic, mix tomato paste, water and seasonings. Add to celery and onion; bring to a boil. Lower heat and simmer slowly for 1 hour. In an 8 x 8 x 2 inch baking dish put in a thin layer of sauce, sprinkle with Parmesan cheese and top with half the macaroni. Add Ricotta cheese and cover with half the remaining sauce, sprinkle with Parmesan cheese. Add remaining macaroni and sauce and top generously with grated Parmesan cheese. Bake in 350 degree oven for 30 minutes. Makes 4 servings. |
