PUMPKIN AND CHEESE ROLL 
3 eggs
1 c. sugar
2/3 c. canned pumpkin
1 tsp. lemon juice
3/4 c. flour
1 tsp. baking powder
2 tsp. cinnamon
1 tsp. ginger
1/2 tsp. vanilla
4 tbsp. butter
8 oz. cream cheese
1 c. powdered sugar (plus a little more)
1 c. chopped walnuts
1/2 tsp. nutmeg
1/2 tsp. salt

Beat eggs on high for 5 minutes. Mix in sugar, pumpkin, lemon juice. Sift together flour, baking powder, cinnamon, ginger, nutmeg, and salt. Stir 2 minutes together. Grease and flour 10x15x1 inch pan. Pour mixture into pan. Spread walnuts on top. Bake at 375 degrees for 15 minutes.

Sprinkle towel with a little powdered sugar. Turn pan onto towel. Roll towel to cool.

FILLING:

Mix powdered sugar, cream cheese, butter, and vanilla. Spread on top of pumpkin and roll. Chill. Serve.
