EASY CURRY 
3 tbsp. butter
1/2 c. chopped apple
1/2 c. chopped onion
1 garlic clove, crushed
1 tbsp. curry powder
1 tbsp. flour
1 c. chicken or turkey stock (homemade is great, but canned broth will do)
2 c. diced cooked turkey, chicken, lamb, or whole shrimp

In electric fry pan or chaffing dish, melt butter and add apple, onion, garlic, and curry powder. Cook until onion is transparent (if using chafing dish, over direct heat). Add flour and cook, stirring for 2 minutes. Add stock and cook the sauce, still stirring until smooth and thickened. Add meat and cook slowly until meat is heated through. Serve with buttered rice. Serves 4.
