EGGPLANT CASSEROLE 
2 eggplants
Salt to taste
Pepper to taste
Flour to cover eggplant
Corn oil
1/2 lb. ground meat
1 pkg. dry Italian seasoning
1 sm. can tomato paste
3 cans water (use tomato paste can)
1/2 c. Parmesan cheese

Peel and slice eggplants, salt, pepper and flour each slice. Lightly brown in corn oil. Place in greased casserole dish.

MEAT SAUCE:

Lightly brown the ground meat. Add dry Italian seasonings, the can of tomato paste, and 3 cans water. Simmer for 20 minutes. Pour this mixture over the fried eggplant. Sprinkle with Parmesan cheese. Cover with foil. Bake at 350 degrees for about 40 minutes.
