TUNA RICE SALAD 
3/4 c. uncooked rice
1 sm. can tuna, drained
1 sm. can pineapple tidbits, drained
1/2 c. 1000 Island dressing
2 tbsp. green onion, finely chopped
1 (10 oz.) frozen peas
1/2 c. chopped celery
1/2 c. sour cream
Lettuce cups

Cook rice following directions, drain. Cook peas directions, drain. In bowl combine rice, peas, tuna, pineapple and celery. Mix together the dressing, sour cream and onion. Pour over rice mixture and toss lightly. Cover and chill for 12 - 24 hours. Before serving toss mixture lightly. Spoon into lettuce cups. Enjoy!! Serves 6 - 8.

I use Minute Rice. For a real crowd pleaser use 1# cooked salad shrimp instead of tuna. Really great. Then I use grapes, strawberries, and cantaloupe as a fruit salad on the plate and you have a meal.
