GREASE FREE FAVORITE DOUGHNUTS | |
4 c. sifted flour 4 tsp. baking powder 1/2 tsp. salt 1/4 tsp. nutmeg 1 1/3 c. sugar 2 eggs, well beaten 2 tbsp. melted butter 1 c. milk 1/4 tsp. lemon extract Sift flour once, measure; add baking powder, salt and nutmeg. Resift 3 times. Combine sugar and beaten eggs; add melted butter. Add flour mixture alternately with milk, a small amount at a time, to sugar/egg mixture. Beat until smooth. Add extract. Chill dough for easier handling. Roll out dough on floured surface, to 1/2" thick. Cut with floured doughnut cutter and fry in deep hot fat. Have a kettle of boiling water on the side, and as you fork the doughnuts out of the hot grease, plunge them quickly in and out of the boiling water. This cuts the grease. Drain very well at once on paper towels. Shake doughnuts in a bag of granulated sugar while warm. |
