DEVILED CRABMEAT | |
2 tbsp. butter 2 tbsp. flour 2 egg yolks Few grains cayenne pepper 2 tsp. Worcestershire sauce 1 c. sliced mushrooms 2 c. milk or cream 1 tsp. salt 2 tsp. dry mustard Melt butter and add mushrooms and heat. Add flour and stirring constantly add milk, egg yolks and salt. Combine pepper, mustard and Worcestershire and add to mixture. Bring to boil. Remove from heat. Add 10 to 12 ounce crabmeat. Place in greased individual baking dishes or shells or in shallow casserole. Sprinkle with buttered bread crumbs. Bake in moderately hot oven, 400 degrees for 15 minutes. Serves 6-8. |
