EASY CHEESE POTATOES 
1 (2 lb.) bag frozen hash brown potatoes, partially thawed
1 lb. sour cream
8 oz. shredded colby cheese
4 oz. shredded Monterey Jack cheese
1/2 c. chopped onion
1/2 c. chopped green bell pepper
1 (2 oz.) jar sliced pimentos, drained

Combine all ingredients except 1/2 cup colby cheese. Pour into 13 x 9 inch baking pan and bake at 350 degrees for 55-60 minutes. Top with remaining colby cheese and bake 3-5 minutes longer, until cheese melts.
