TONY'S EASY TERIYAKI CHICKEN WITH RICE | |
This is a quick recipe for a good meal. 2 lb. boneless chicken breast 2 tbsp. extra virgin olive oil (EVOO) 2 bags "Boil in a Bag" brown rice* 1-2 tbsp. butter (for rice) Note: If you have a rice cooker, prepare 2-3 cups regular rice in advance. SAUCE: 3/4 cup teriyaki sauce with pineapple 3/4 cup honey teriyaki sauce 1/4 cup soy sauce 3 tsp. Splenda (or your favorite sugar substitute) 2 tbsp. barbecue sauce (I like Sweet Baby Ray's) Mix sauce ingredients. Stir until everything is mixed. Cut chicken into cubes and add to sauce. When all chicken is added, make sure all chicken is covered in sauce and let sit until frying pan is ready. In a large frying pan, add small amount oil to bottom over medium heat. Add chicken and sauce and cover. Allow to cook for 15 to 20 minutes or until chicken is cooked fully. Microwave "Boil in a Bag" brown rice for 12 to 15 minutes (or follow package directions). When complete, add a tablespoon or two of butter and stir. Serve chicken in bowl or serving dish which allows you to keep excess sauce on top. Some will enjoy the chicken and rice mixed together (as I do). Leftovers make a great lunch! Serves 4-6. Submitted by: Anthony |
