MEXICAN CORNBREAD 
3 c. cornbread mix
4 eggs
1 c. chopped onion
2 c. grated cheddar cheese
2 or 3 chopped jalapeno peppers
2/3 - 1 c. buttermilk (stir in 1/2 tsp. baking soda)
1 (16 oz.) can cream style corn
2 tbsp. melted bacon drippings

Mix all ingredients. Pour into 9"x13" pan (greased with 1 more teaspoon of bacon drippings). Bake at 400 degrees for 45 to 55 minutes.
