MEXICAN BEEF STIR FRY | |
1 lb. top round steak 1 red bell pepper, cut in strips 1 tsp. dried oregano 1 med. onion, chopped 3 c. sliced Romaine, torn up 2 tbsp. oil 1 tsp. ground cumin 1 clove garlic minced 1 or 2 chopped jalapenos (remove seeds) Cut beef top round into strips. Combine oil, cumin, garlic and oregano. Reserve half. Heat half the seasoned oil in large non-stick skillet over medium heat, until hot. Add red pepper, onion and jalapeno peppers. stir fry 2 or 3 minutes or until crisp-tender. Remove and reserve. In same pan, stir fry beef strips half at a time in reserved oil. Return vegetables to pan and heat through. Serve beef mixture over lettuce. Makes 4 servings. |
