ONION SMOTHERED LONDON BROIL 
2 lg. onions
1/4 c. Marsala wine
1 tsp. dried basil
1 tsp. low sodium salt
Flank steak or London Broil
Cooking oil spray (vegetable or corn)

Spray large heavy non-stick skillet with cooking oil and add basil. Cook in warm skillet, about 1 minute. Thinly slice onions and add to skillet, saute until translucent, stirring occasionally to prevent sticking. Add wine and simmer for 2 minutes. Cover skillet and simmer over low heat until done, about 1/2 hour.

While onions are cooking, spray London Broil with cooking oil and sprinkle on lemon pepper (both sides). Broil to your liking, turning when half done. Thinly slice (1/4 inch) at a 45 degree angle. Cover with onions and pan juice and serve. Serve with rice or mashed potatoes.

VARIATIONS: Substitute 2 tablespoons water or teriyaki sauce for wine. Add chopped mushrooms.
