GOOD FRIDAY CASSEROLE 
1 sm. onion, chopped
1/4 c. butter
1/4 c. all-purpose flour
2 c. milk
1/3 c. mayonnaise
2 tbsp. prepared mustard
Salt & pepper
1 (10 oz.) frozen cauliflower, thawed and cut up
1 (6 oz.) can tuna, undrained
1/4 lb. egg noodles, cooked
1/2 c. red pepper, chopped
1/2 c. green pepper, chopped
Bread crumbs

In small saucepan, saute onion in butter until tender. With a whisk, blend in flour. Gradually stir in milk and cook until sauce thickens, stirring constantly. Remove form heat and blend in mayonnaise, mustard, salt and pepper. In a greased 2-quart glass casserole dish, combine the sauce, cauliflower, tuna noodles and peppers. Sprinkle with bread crumbs on top.

Bake in a preheated 350°F oven for 35 minutes.
