PORK AND BEAN CAKE | |
1 c. golden seedless raisins 1 c. boiling water 3 eggs 1 c. oil 1 1/2 c. sugar 1 (1 lb.) can pork and beans 2 tsp. vanilla 1 tsp. cinnamon 1/2 tsp. baking powder 1 tsp. baking soda 1/2 tsp. salt 3 c. sifted flour 1 c. coarsely chopped nuts (walnuts are good) Mix raisins and boiling water together; set aside. Combine eggs, oil, sugar, add pork and beans, vanilla, cinnamon, baking powder, baking soda and salt. Mix well by hand with a wooden spoon, not a mixer (that will break up the beans). Add flour; fold in raisins and raisin liquid, along with nuts. Bake in two greased loaf pans until cakes test done. Bake at 325 degrees for 50 to 60 minutes. |
