BREAKFAST IN ONE 
1 (12 oz.) pkg. hashed brown potatoes
1 1/2 c. ham or sausage, chopped
1/2 c. onion, chopped
1/2 c. chopped green pepper
1 (4 oz.) can mushrooms, drained
8 eggs, beaten
Salt and pepper to taste
American cheese slices

Saute potatoes until soft. Press into pie pan to make one 9 inch pie shell.

Saute ham, onion, pepper and mushrooms; drain.

Combine eggs, salt and pepper. Add ham mixture to eggs. Pour into shell. Arrange cheese slices on top. Bake at 350 degrees for 10 minutes. Bake at 400 degrees for 10 minutes or until potatoes are brown. Yield: 6-8 servings.
