CRANBERRY ORANGE GLAZED CORNISH
HENS
 
2 cornish game hens
2 tbsp. butter melted
1/4 c. whole cranberry sauce
2 tbsp. orange marmalade
1 tbsp. lemon juice
1 tsp. minced onion
1 tsp. corn starch
1/2 c. mandarin orange sections, drained

Rinse hens, pat dry. Coat inside and outside of hens with melted butter, sprinkle with salt and pepper. Place hens, breast side up, on a rack in shallow roasting pan. Insert meat thermometer. Cover loosely with foil. Roast in 375°F oven for 30 minutes. Uncover and roast one hour or until thermometer reads 185°F. Meanwhile, for sauce, in a one quart saucepan, combine cranberry sauce, orange marmalade, lemon juice, minced onion and corn starch. Cook and stir until thick and bubbly. Cook and stir 2 more minutes. Remove from heat, stir in orange sections. Brush sauce on hens several times during last 20 minutes of roasting.
