CRANBERRY ORANGE GLAZED CHICKEN | |
2/3 c. freshly squeezed orange juice 2/3 c. fresh cranberries, halved 1 tsp. sugar 2 tsp. cornstarch, dash ground cloves 2 whole bone in chicken breasts, halved, skin removed In 2 cup measure, combine all ingredients, except chicken. Microwave on high 3 to 4 minutes, or until mixture thickens, stirring 2 or 3 times during cooking. Set aside, arrange chicken on roasting rack with meatiest portions to outside. Cover with wax paper. Microwave on high 5 minutes rearrange chicken. Microwave at high 3 more minutes. Cover with 1/3 of glaze. Microwave at two to four minutes longer, or until done. Serve remaining glaze over chicken. 197 calories. |
