SMOTHERED FRIED CABBAGE WITH HAM 
1 lg. green cabbage
4 slices fat back
2 tbsp. butter
1/2 tsp. salt
1/2 tsp. pepper
1 lb. smoked ham

Discard outer leaves of cabbage. Tear cabbage apart and wash leaves under cold water. Cut cabbage up coarsely and set aside to drain.

Score fat back and fry in heavy skillet over medium heat for 10 minutes. Remove fat back from pan. Turn heat up and add shredded cabbage and quickly toss, coating it all over with content in frying pan. Cover, forcing cabbage down. Lower heat and steam 5 minutes. Remove lid and add seasoning and ham. Replace the lid and continue cooking 10 minutes.
