SPINACH - MUSHROOM SALAD | |
1/3 c. vegetable oil 1/4 c. wine vinegar 1/4 tsp. salt Generous dash of pepper 1 clove garlic, crushed 1 lb. spinach, torn into bite sized pieces, about 8 cups 8 oz. fresh mushrooms, sliced 2 slices bacon, crisply cooked and crumbled 1 hard cooked egg, chopped Shake oil, vinegar, salt,, pepper, and garlic in tightly covered container. Toss with spinach and mushrooms; sprinkle with bacon and egg. Yields 8 servings. |
