SPINACH, MUSHROOM AND ORANGE
SALAD
 
1 lb. spinach, washed & torn into pieces
3/4 lb. mushrooms, cleaned & sliced thin
1 can mandarin oranges or 1 lg. naval orange, peeled, sectioned & cubed

DRESSING:

1/2 c. olive oil
1/3 c. red wine vinegar
2 tbsp. honey
1 tbsp. finely grated yellow onion
1/2 tsp. salt
1/2 tsp. powdered mustard
1/8 tsp. fresh ground black pepper

Combine top three ingredients. Mix dressing ingredients together and blend into spinach mixture. Chill. Serves 6 to 8.
