CHOCOLATE PEPPERMINT DESSERT | |
2 c. vanilla wafers or graham crackers 1/4 c. melted butter 1/2 c. butter 1 1/2 c. sifted powdered sugar 3 squares unsweetened chocolate 3 eggs, slightly beaten 1 1/2 c. whipping cream 8 oz. miniature marshmallows 1 dozen (or so) peppermint candy pieces 1. Melt 1/4 cup melted butter and add to 2 cups crushed vanilla wafers or graham crackers. Press into bottom of a 9"x13" pan for crust. 2. Mix in mixing bowl 1/2 cup butter, 1 1/2 cups sifted powdered sugar, 3 squares of melted unsweetened chocolate and 3 eggs, slightly beaten. Beat until fluffy and put on top of crust. 3. Freeze until firm. 4. Beat 1 1/2 cups whipping cream and mix in 8 ounces of miniature marshmallows and spread on chocolate mixture. 5. Sprinkle hard crushed peppermint candy on top, just enough for color and crunch. 6. Return to freezer until 10 minutes before serving. |
