BIG APPLE PANCAKE 
3 eggs
3/4 c. milk
3/4 c. flour
1/2 tsp. salt
3-4 tart apples, peeled & thinly sliced
6 tbsp. butter
1/4 c. granulated sugar
1 tsp. cinnamon
1/4 tsp. nutmeg

Preheat oven to 450 degrees. Beat eggs, milk, flour and salt until smooth. Stir in 1/2 cup sliced apples. In heavy ovenproof 10 inch skillet, melt 2 tablespoons butter and cook until bubbling. Pour batter into skillet, pushing the apples away from the sides of the skillet. Place in oven and bake 15 minutes. Reduce heat to 350 degrees and continue baking another 10 minutes. Remove skillet from oven and slide pancake onto a platter; keep warm.

Melt remaining butter in same skillet. Stir in sugar, cinnamon and nutmeg; bringing mixture to a boil. Stir in remaining apples. Reduce heat and simmer for 10 minutes or until apples are tender. Spoon sauce into center of pancake and serve immediately. Serves 4.
