APPLE PUFFED PANCAKE 
6 eggs
1 1/2 c. milk
1 c. flour
3 tbsp. sugar
1 tsp. vanilla
1/2 tsp. salt
1/4 tsp. cinnamon
1/4 lb. butter
2 - 3 apples, peeled and thinly sliced
4 tbsp. brown sugar

In blender or mixer bowl mix eggs, milk, flour, sugar, vanilla, salt and cinnamon until well blended. Batter will be lumpy. Melt butter in 13 x 9 x 2 inch pan in oven. Add apple slices to pan (should sizzle). Return to oven until butter sizzles. Do not let brown. Remove dish from oven and immediately pour batter over apples. Sprinkle with brown sugar. Bake in middle of oven at 425 degrees for 20 minutes until puffed and brown. Serve immediately.
