MISSISSIPPI MUD CAKE | |
2 sticks butter 2 c. sugar 4 eggs 4 tbsp. cocoa 1 1/2 c. flour 1/4 tsp. salt 1/2 c. nuts, chopped 1/2 c. chocolate chops Mix in order given and bake at 350 degrees for 20 to 25 minutes in a greased 13 x 9 pan. Do not overbake. Once it is removed from the oven, sprinkle miniature marshmallows over top of cake. Marshmallows will melt somewhat. Let cool and make chocolate frosting. 1/2 c. brown sugar 3 tbsp. butter 1/4 c. evaporated milk 1 sq. unsweetened chocolate 1/2 tsp. vanilla Boil all but vanilla for 2 minutes over moderate heat, stirring constantly. Remove from heat, add vanilla and beat until mixture thickens somewhat and is cool enough to spread over marshmallows on cake. Let frosting set before serving. |
