CHEESECAKE 
1 env. Knox unflavored gelatin
1/2 c. sugar
1 c. boiling water
2 (8 oz.) pkgs. softened Philadelphia cream cheese
1 tsp. vanilla extract
9" graham crust
1 can favorite pie filling

In large bowl mix gelatin with sugar; add boiling water and stir until completely dissolved. With blender or electric mixer, beat in cream cheese and vanilla until smooth. Pour into prepared crust; chill until firm. Top with favorite pie filling or fresh fruit. Makes 8 servings.
