TURKEY GUMBO 
5 slices bacon
1 sm. onion, chopped
2 tbsp. all-purpose flour
1 (16 oz.) can tomatoes, undrained
1 clove garlic, minced
1/2 tsp. salt
1/2 tsp. pepper
2 qt. water
2 bay leaves
2 c. chopped, cooked turkey
1 c. turkey broth
1 (10 oz.) pkg. frozen cut okra
Hot cooked rice
Gumbo file

Fry bacon in a Dutch oven; drain, reserving 2 tablespoons drippings in Dutch oven. Crumble bacon and set aside. Add onions to drippings; saute until tender. Stir in flour; cook over medium heat, stirring constantly 4 to 5 minutes. Add reserved bacon and next 8 ingredients, stirring well.

Bring mixture to a boil and reduce heat, simmer uncovered for 1 1/2 hours. Stir in okra; cook an additional 30 minutes. Remove bay leaves. Serve gumbo over rice. Add a small amount of file to each serving. Yield: 2 quarts.
