TURKEY BONE GUMBO 
Turkey bones
1/2 c. bacon drippings
1 c. flour
1 bell pepper, chopped
2 qts. turkey broth
Tabasco
1 tsp. dried basil
About 2 c. chopped turkey
1 lb. smoked sausage, cut into bite pieces
Green onion tops
Water
2 onions, chopped
3 cloves garlic, minced
2 stalks celery, chopped
Salt and pepper to taste
2 bay leaves
1 tbsp. dried parsley

After the turkey has been carved, put bones into plenty of water and boil slowly about 1 1/2 hours or until remaining meat falls off the bone. Make a roux of bacon drippings and flour. Add onions, garlic, bell pepper, celery and cook until wilted. Add hot broth, salt and pepper, dash of Tabasco, bay leaves, basil and parsley. Cook for 1 hour. Add turkey and sausage and cook about 15 minutes longer. Add green onions and cook a few minutes longer. Serve with cooked rice and add a dash of gumbo file in each dish, if desired. Serves about 8.
