HARVEST APPLE CAKE 
4 c. coarsely diced apples
1 c. brown sugar
1 c. white sugar
2 eggs, slightly beaten
1/2 c. vegetable oil
2 tsp. vanilla
2 c. flour
2 tsp. baking soda
1 tsp. salt
2 tsp. cinnamon
1 c. chopped nuts

Combine apples and sugars; let stand. Beat eggs, oil, and vanilla. Mix dry ingredients. Add egg and sugar mixtures to flour mixture. Add nuts.

Pour into greased and floured 9x13 pan. Bake at 350 degrees for 1 hour. Let cool in pan. Frost with cinnamon icing.
