PUMPKIN PIE 
3 egg whites, slightly beaten
1 (16 oz.) can pumpkin
1/2 c. sugar
1/4 c. instant nonfat dry milk powder
1 tsp. cinnamon
1/4 tsp. nutmeg
1 1/2 c. undiluted evaporated skim milk
1 unbaked pie crust (made with vegetable oil)

Prepare crust as directed. Preheat oven to 425 degrees. In large mixing bowl, combine all ingredients. Pour into unbaked shell. Bake 15 minutes. Reduce temperature to 350 degrees and bake 40-45 minutes, or until knife inserted in center comes out clean.

Serves 8.
