FRUIT SALAD 
1 tsp. orange rind or zest
2 tbsp. orange juice
2 tbsp. orange flavored liqueur (optional)
1/4 lb. seedless grapes (about 3/4 c.)
3/4 c. fresh pineapple, cut into 1 inch pieces
1/2 c. orange segments, cut into 1 inch pieces
1/2 c. grapefruit segments, cut into 1 inch pieces
1 apple, peeled and chopped
1/2 c. sm. whole or sliced strawberries

Make orange marmalade by mixing orange rind and juice, sugar and orange liqueur together in small bowl. Place all fruit BUT strawberries in bowl. Pour marinade over. Refrigerate for 1 hour or longer.

May be refrigerated overnight.

Before serving, stir in strawberries. Serves 4.

VARIATION: Vary fruits with season, such as melon balls, berries, and peaches. Do not marinate soft fruit; stir them into the marinade before serving.

Serve with your favorite omelet, muffin with jam and fresh orange juice.
