SHRIMP JAMBALAYA CASSEROLE 
2 lbs. peeled shrimp
1 stick butter
1 can cream of shrimp soup
2 cans cream of mushroom soup
1 c. seasoning (onions, bell pepper, celery and green onions), mixed
Salt and pepper
4 c. cooked rice
Bread crumbs

Melt butter and saute all seasonings until tender. Add shrimp. Cook until pink. Add cream of shrimp soup and cream of mushroom soups. Add salt and pepper to taste. Simmer about 30 minutes. Add mixture to cooked rice. Mix well. Put in casserole dish or shallow baking pan. Sprinkle bread crumbs on top. Bake in oven at 350 degrees for 30 minutes or until top is brown.
