ZUCCHINI CAKE | |
3 c. grated unpeeled zucchini 2 c. flour 2 c. sugar 3 eggs 1 c. vegetable oil 2 tsp. vanilla 1 tsp. salt 1/4 tsp. baking powder 2 tsp. baking soda 3 tsp. cinnamon 1 c. raisins Combine eggs, oil, sugar, zucchini and vanilla. Sift flour, baking soda, salt, powder and cinnamon. Stir in flour mixture until smooth. Add raisins. Pour into a greased and floured 9 x 13 x 2 inch pan. Bake at 350 degrees for 40 minutes. Cool. Top with a dollop of Cool Whip when serving. |
