YELLOW SQUASH CASSEROLE 
1 1/2 lb. yellow squash, sliced thin
1 can water chestnuts
1 can cream of chicken soup
1 (8 oz.) sour cream
1 med. onion, chopped
1 carrot, grated

Mix all ingredients and put in lightly greased casserole dish. Make topping by browning 20 crushed crackers in a frying pan in 1 stick butter. Sprinkle over the top and bake 1 hour 350 degrees. Let sit a short time before serving.
