GLAZED STRAWBERRY PIE 
1 (9 inch) baked pie shell
1 1/2 qts. fresh strawberries
3 oz. cream cheese
1 c. sugar
1/2 c. water
2 1/2 tbsp. cornstarch
1 tbsp. butter
Red food coloring

Spread a thin layer of softened cream cheese on pie crust so juice will not soak crust. Place 1 quart of berries over cream cheese.

Make a glaze by crushing 1/2 quart of berries combined with sugar, water and cornstarch in saucepan. Bring to a boil. Add butter and few drops of red food coloring. Pour glaze over berries to cover all. Cool and serve with Cool Whip.

I do the same thing for fresh peach pie and blueberry pie.
