CHICKEN, BROCCOLI AND PASTA
SHELLS
 
1 c. chopped broccoli
1/2 c. chopped onion
2 cloves garlic, chopped finely
1 carrot, cut into very thin strips
3 tbsp. vegetable oil (can substitute Italian dressing)
2 c. cut up cooked chicken
1 tsp. salt
4 c. hot cooked shells
1/3 c. grated Parmesan cheese
2 tbsp. chopped parsley

Cook and stir broccoli, onion, garlic and carrot in oil in a skillet over a medium heat until broccoli is crisp-tender, about 10 minutes. Stir in chicken, salt. Heat until chicken is hot, about 3 minutes. Spoon over pasta shells. Sprinkle with cheese and parsley.
