VEGETABLE SANDWICH 
2/3 c. grated carrot
1/4 c. minced green pepper
1/4 c. minced onion (less if strong)
1/4 c. chopped cucumber
1/4 c. chopped celery
8 oz. softened cream cheese
2 tbsp. lemon juice
1 1/2 tbsp. mayonnaise

Combine vegetables and mix well. Combine cream cheese, lemon juice and mayonnaise. Beat until fluffy. Fold in vegetables. Chill several hours. Serve on crust trimmed white bread. For dip place vegetables in food processor or mini chopper.
