TURKEY OR CHICKEN CASSEROLE 
2 c. cut up, cooked chicken or turkey (or tuna)
1 c. chopped celery
1/2 c. chopped onion
1 med. size can pimientos, chopped
2 cans cream of mushroom soup
1 sm. can mushrooms, juice & all
1 sm. pkg. cashew nuts
1 can (or pkg.) chow mein noodles (save some noodles to sprinkle on top)

Mix all ingredients together. Place in casserole, bake, covered at 325 degrees about 2 hours. Uncover last part of baking, to brown top. (Great to use up holiday leftovers!)
