TEXAS BRAN MUFFINS 
1 c. boiling water
1 c. All Bran cereal
1 c. sugar
1 stick butter (1/4 lb.)
2 beaten eggs
2 c. flour
2 1/2 tsp. baking soda
1/2 tsp. salt
2 more c. All Bran

Sift together flour, baking soda and salt into small bowl. In large bowl, pour 1 cup boiling water over 1 cup All Bran; add sugar and butter and stir until butter melts. Add eggs to the buttermilk; then add to the Bran and sugar mixture. Add flour, soda, salt and remaining 2 cups All Bran. Mix all together, cover, and refrigerate until ready to bake. Fill muffin cups 2/3 full and bake at 400 degrees for 15 to 20 minutes.
