SCALLOPED POTATOES 
2 1/2 qt. milk
3 oz. butter
3 oz. flour
2 tsp. salt
White pepper
7 1/2 lb. potatoes

Make a thin white sauce using first 5 ingredients. Keep hot while preparing potatoes. Peel and eye potatoes. Cut into 1/8 inch slices. Place potatoes in buttered baking pan, layered. Pour in sauce, lifting potatoes so sauce will cover.

Cover with foil and place in 350 degree oven for 1/2 hour. Uncover and continue to bake until top is brown and potatoes are tender. 25 servings, 5 oz.
