MINIATURE CHEESECAKES 
3 lg. pkgs. cream cheese
2/3 c. sugar
3 eggs
1 tsp. vanilla
Vanilla wafers
Fruit filling (opt.)

Cream together first 4 ingredients. Line muffin pan with cup cake liners. Put one vanilla wafer in bottom of each cup. Fill with cream cheese mixture, 2/3 full. Bake 15 to 20 minutes at 350 degrees. Refrigerate to cool. Top with desired fruit filling before serving.
