MINIATURE CHEESECAKES 
2 (8 oz.) pkgs. cream cheese
1 cube butter
3/4 c. sugar
2 eggs
1 tbsp. lemon juice
Vanilla wafers or graham crackers
Miniature cupcake papers
Cherry pie mix

Crumble waters or graham crackers in blender. Press approximately one teaspoon crumbs in miniature papers. Whip together until fluffy: Cream cheese, butter, sugar, eggs and lemon juice. Bake at 375 degrees for 15 to 20 minutes. After cooling, put cherry on top of each cake.
