POTATO SALAD 
6 med. red potatoes
6 eggs
5 oz. sweet pickle relish
2 pkg. Good Seasons Italian salad dressing mix (dry)
1 1/2 to 2 c. mayonnaise to taste
1 tbsp. mustard
1/2 c. ripe olives and/or pimento (optional)

Wash potatoes and put in large pan with water and boil until tender throughout. Drain and let cool until easy to hold. Peel off skin and dice in large pieces. Boil 6 eggs for a minimum of 10 minutes after boiling point has been reached. Remove shells and dice into small pieces. Add pickle relish, Good Seasons mix, mayonnaise, mustard, and optional ingredients. Mix well. Cover tightly and refrigerate until chilled. Makes 3-4 quarts.
