POTATOES WHIPPED WITH CHEESE 
3 lbs. potatoes, cooked and whipped
6 oz. cream cheese
1/3 c. Parmesan cheese
1/2 c. grated cheddar cheese
1 lg. jar pimentos with juice
1/4 c. green pepper, optional
1/4 c. onion, optional
2 tbsp. butter
Dried parsley to garnish, optional

Cook and whip potatoes with butter. Add cheeses, pimentos and juice; add green pepper and onion if desired. If mixture is dry, add more butter or a little milk. Pile into ovenproof dish. Garnish with dried parsley. Bake uncovered 30 minutes or until lightly browned at 325 degrees.
