WHIPPED POTATO BOATS 
6 lg. baking potatoes
3 slices bacon
1/2 c. sour cream
1/2 c. milk
1 1/2 tsp. salt
4 green onions, chopped fine
1/2 c. Cheddar cheese, shredded

Preheat oven to 400 degrees. Wash potatoes and rub with oil. Bake for 1 hour or until tender. While potatoes are baking, cook bacon until crisp. Drain, crumble and set aside. Remove oven heat to 350 degrees.

Cut a slice from the top of each potato and scoop out pulp. Mash pulp and add sour cream, milk, salt, pepper and green onion. Fill potato shells with mixture and sprinkle with cheese and bacon. Bake at 350 degrees for 10 minutes.
