VEGETARIAN BASIL OR SAGE GRAVY 
Gravy and biscuits are ordinarily thought of as meat-based, especially in the South; this recipe shows how even gravy can be made without meat, and with healthy ingredients. A small amount of cooking ability is necessary and the ingredients amounts are approximate; add and subtract to get the right consistency and flavor.

1/8 c. olive oil
1/2 c. whole wheat flour
2 tbsp. sesame seeds
1 1/2 c. water, soy milk or skim milk
Tamari (a soy bean liquid which adds flavor and salty taste)
Black pepper
Garlic powder

Put 1/8 cup olive oil in a pan and heat over medium heat. Gradually add 1/2 cup whole wheat flour, stirring so that the flour is fully soaked by the oil. You can partially substitute oat bran for the flour. Add 2 rounded tablespoons of sesame seeds and continue to cook for 1 minute or so. Then add 1 1/2 cups water, soy milk or skim milk, stirring continuously until there is a proper gravy consistency.

Add 1 tablespoon of tamari, black pepper and garlic powder to taste. Finally, add either chopped fresh basil (or dried basil) or chopped fresh sage (or dried sage) to taste. Cook for about 1 minute or so after adding basil or sage. Serve over fresh biscuits with sliced tomatoes and preserved on the side. Serves 2.
