GREEN BEAN SOUP 
Green beans, fresh (2 c.)
2-3 green onions
1 med. potato
4-6 c. milk
Salt, pepper, butter

Slice beans crossways in small thin slices a group at a time. Slice a few green onions. Dice 1 medium potato. Cook in minimum amount of water until tender. Add milk to amount of soup desired. Simmer to blend flavors. Add butter, salt, pepper to taste.

Best with homemade noodles. Stir 1 egg with flour until almost too thick to stir - spoon small amounts into hot soup and cook for 10-15 minutes until done. Again, we never have a recipe - just a favorite!
