CURRY WITH POTATOES AND PEAS 
3 onions, chopped
3 tbsp. tomato paste
3 tbsp. yogurt
Coriander, masalas
2 cloves garlic, chopped
2 tbsp. gingerroot, chopped
Salt, pepper, paprika
Cumin, black mustard seeds

Saute onions and garlic in 1 tablespoon oil until very brown. Add gingerroot, tomato paste and yogurt, stirring constantly. Add seasonings; set aside.

4 potatoes, peeled and diced
1 pkg. frozen peas

Stir into curry mixture; add 2 cups water. Simmer covered until potatoes are cooked. Adjust seasonings. Best after 24 hours. Serve with Pilau.
