HEAVENLY POTATOES 
6 med. potatoes (boil in skins, cool & skin shred)
2 c. sharp cheese
1/4 c. butter
1 1/2 c. sour cream
1/3 c. green onion, chopped
1 tsp. salt
1/4 tsp. pepper
2 tbsp. butter (extra)

In saucepan put butter, cheese, sour cream until almost melted. Add other ingredients except extra butter. Fold in shredded potatoes, put in casserole dish. Add additional butter. Bake at 350°F for 25 to 30 minutes.
