APPLE RAISIN BRAN MUFFINS | |
1 1/2 c. Nabisco shredded wheat & bran 1 c. skim milk 1/4 c. softened no cholesterol butter 1/2 c. honey 1 lg. Granny Smith apple, peeled & cut in chunks 3/4 c. raisins 1 lg. egg, well beaten 1 tsp. cinnamon 1 1/4 c. flour 2 tsp. baking powder 1/2 tsp. baking soda Lightly grease pan or use liners. In large bowl soak cereal in milk for 5 minutes. Stir in honey, egg, apple, butter, cinnamon and raisins. Then fold in flour, baking soda and baking powder. Mix only enough to moisten. Do not over mix. Evenly distribute among muffin cups. Bake at 400 degrees 20 minutes. Each muffin contains approximately 169 calories, 4.3 grams fat, 23 milligrams cholesterol and 205.6 milligrams sodium. |
